IMPOSSIBLE ZUCCHINI PIE
3 cups shredded zucchini
1 medium onion, finely chopped
1 green pepper, finely chopped or ½ green pepper & ½ red pepper
4 eggs
1 cup Bisquick baking mix
½ cup vegetable oil
½ cup parmesan cheese
½ cup shredded mozzarella cheese
Mix all ingredients in a bowl, then pour into a greased glass pie dish. Bake in a preheated 350° oven for 45 minutes or until the top is golden brown. Prior to cutting, cool slightly.
