TEMPTING TUNA MELT

1 (6 ½ oz.) can tuna in water, drained
¼ cup mayonnaise
¼ cup chopped scallions
¼ cup chopped red pepper
2 English muffins, split, then lightly toasted
4 green leaf lettuce leaves
4 tomato slices
4 slices American cheese

Heat broiler. Mix tuna, mayonnaise, green onions and red pepper. For each sandwich, top English muffin half with lettuce, tomato and tuna mixture. Place on a cookie sheet. Broil 2 minutes. Top with slice of cheese, then broil 1 to 1 ½ minutes. Makes 4 servings.
