ROYAL KIELBASA BAKE

recipe by Mary T.

2 tablespoons butter
2 cups chopped, cooked kielbasa
½ cup chopped onion
½ cup chopped celery
1 tablespoon chopped pimiento
1 cup sour cream
1 can Pillsbury biscuits - 10 biscuit size
¼ cup shredded cheddar cheese

In a large skillet combine butter, celery and onion. Cook until tender. Add kielbasa and pimiento, stir fry for 2 to 3 minutes. Add sour cream and heat through. Press all 10 ready-to-bake biscuits on the bottom and sides of a greased 9 inch pie pan. Spoon the kielbasa cream mixture over the biscuits and bake in a preheated 375° oven for 8 to 13 minutes or until done. Top with cheddar cheese, placing dish in oven just long enough for the cheese to melt on the baked pie.

For a crowd:

Triple the ingredients and prepare according to above directions. Lightly grease a 9x13 inch baking pan. Instead of the biscuits, open 1 can Pillsbury Classic Pizza Crust; unroll, then place in the baking pan and press dough halfway up the sides of the pan. Spoon the kielbasa cream mixture over the pizza dough and bake in a preheated 375° oven for 35 to 40 minutes or until done. Top with ¾ cup cheddar cheese, placing pan in oven just long enough for the cheese to melt. Allow to cool and set for 15 to 18 minutes, then cut into squares.
