ALOHA CAKE

1 yellow cake mix
4 eggs
1 stick butter, softened
1 teaspoon vanilla extract
1 small can mandarin oranges (undrained)
FROSTING
Preheat oven to 350°. Grease a 9x13 inch baking pan and set aside. Combine cake mix, eggs, butter, vanilla and ½ cup juice from mandarin oranges; beat for 4 minutes. Add oranges, beating until they are small. Pour into prepared pan and bake for 25 to 30 minutes. Cool cake in pan. Frost cold cake. Make ahead and refrigerate.
FROSTING
1 (3.4 oz.) package instant vanilla pudding
1 (1 lb. 4 oz.) can crushed pineapple (undrained)
1 (4 oz.) container Cool Whip
Blend pudding and juice from crushed pineapple together with mixer. Add Cool Whip, then fold in crushed pineapple.
FRESH APPLE CAKE

4 eggs
1 cup vegetable oil
2 cups flour
2 cups sugar
½ teaspoon salt
4 teaspoons baking powder
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
6 MacIntosh apples, peeled and sliced thin
1 cup chopped walnuts
Beats eggs, gradually add oil. Add dry ingredients and beat with an electric mixer a few minutes. Fold in apples and nuts. Fold into a greased and floured tube or bundt pan. Sprinkle with mixture of 2 tablespoons sugar and 1 teaspoon ground cinnamon. Bake in preheated 350° oven for 1 hour or slightly longer. Loosen cake from pan using a knife around the edges. Cool in pan 1 hour.
SOUR CREAM COFFEE CAKE (from Mass Mutual recipe book 1966)

¼ lb. butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 cup sour cream
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
TOPPING
Preheat oven to 350°. Cream together butter and sugar. Add eggs and vanilla, mixing well. Sift dry ingredients together and add to the mixture alternately with sour cream, starting and ending with dry ingredients. Stir until smooth. Grease and flour a tube pan. Spread half of the batter in pan. Crumble half of the topping over it. Add remainder of batter and cover with remaining topping. Bake for 35 to 40 minutes.
TOPPING
¼ cup sugar
1 teaspoon cinnamon
optional: ½ cup walnuts or pecans, chopped
Mix ingredients together.
